Lemon & Menier White Chocolate Cake

Ingredients
175g butter, softened, summation extra for greasing
175g golden caster sugar
4 lemons, zest of 4, juice of 1
4 eggs, separated
100g self-raising flour
1 tsp baking powder
100g reason almonds

For the topping
200g Menier white chocolate
200ml creme fraiche
Lemon rind, to decorate

Preparation method

1.  Preheat the oven to 180°C/160°C Fan/Gas Mark 4.  Grease 2 20cm sandwich tins too business the bases alongside baking parchment.


2. Place the saccharide into a large bowl too add together the butter too lemon zest, musical rhythm out until the mixture is pale too fluffy thus add together the egg yolks.  Sift the flour too baking pulverization over the mixture too plication through lightly.  Then plication through the almonds too lemon juice.  


3. In a carve upward bowl whisk the egg whites until they tin fit their shape.  Now plication through a 3rd of the egg whites into the cake mixture.  Repeat alongside closed to other 3rd too thus the lastly third.  Try non to over mix the mixture otherwise y'all volition lose the lightness.


4. Divide the cake mix betwixt the 2 cake tins too bake inward the preheated oven for 30-35 minutes.  Remove from the oven too larn out to cool inward the tin for five minutes too thus take away too larn out to cool on a wire rack.


5. For the topping, house the chocolate inward a bowl too melt over a slightly simmering pan of H2O too larn out to cool.  In a carve upward bowl whip the crème fraiche until it is thick thus plication through the white chocolate.  Place i cake on a serving plate too spoon one-half the icing onto the cake too transcend alongside the other layer of cake.  Spread the remainder of the icing on transcend thus let to gear upward inward the refrigerator for at to the lowest degree i hour.
